Obviously hot buffalo wing cheese is tops.
I'm a huge Gouda fan... Both smoked and aged. Boars Head also just recently came out with a chipotle Gouda that is out of this world.
Gouda all kinds, just like Hugo said.
Boar's Head smoked gruyere is also tops

Provolone for most sandwiches, Gruyere for crackers
